Sotol is an indegenous spirit of Chihuahua, Mexico. It is said that the wild agave, called dasylirion, has been known by the natives for 800 years. Unlike the blue weber agave which is harvested after 8 to 12 years, the dasylirion agave takes 15 years to reach maturity.

Technically all Tequilas are Mezcals, but not all Mezcals are Tequila. Just like Cognac is a Brandy from a specific region in France, Tequila is a Mezcal from specific regions in Mexico. While Tequila is made exclusively from the Weber Azul agave, Mezcal can be made from up to twenty-eight different species. It is not just the agave that distinguishes the flavor of Mezcal from Tequila; In Mezcal, the agaves are usually buried in a pit in the ground and smoked for three to five days, resulting in a rich, smokey flavor.
